I actually own a portable induction cooktop, and I have to say it’s saved me on many an occasion. The one reason I had for buying it is because the holidays can get pretty hectic in my kitchen, and a portable cooktop has enabled me to have an extra burner that heats immediately (perhaps the biggest benefit of induction cooking). Plus, it can be placed anywhere I have a power outlet.
